If there’s one thing I love during Ramadan, it’s got to be all the fried snacks at iftar! Today I’m sharing a recipe for spicy rice balls that are stuffed with gooey cheese and fried until golden. I love this recipe because they’re absolutely delicious and it’s also a great way to use up any leftover rice!

CHILLI CHEESE RICE BALLS

Spicy, cheesy rice balls that are deep fried until golden!

Ingredients
- 4 cups cooked basmati rice (can be fresh or leftovers)
- 1 tbsp chilli powder
- 1 tbsp cumin seeds
- 2 spring onions, sliced
- 1tsp ginger & garlic paste
- 2 fresh red chillies, sliced
- Handful of chopped coriander
- 1 tbsp salt
- 1 block cheddar cheese / mozzarella, cut in small cubes
- 90g panko breadcrumbs
- 3 eggs, beaten
- 5 tbsp flour
- Enough vegetable oil for frying
Instructions
- Take your cooked rice and add in the chilli powder, cumin, spring onions, ginger and garlic paste, fresh red chillies, coriander and salt. Mix well until everything is combined.
- Mould the rice into bitesized balls and place a cube of cheese in the centre. Place in the fridge for about 20 mins so that they firm up (optional).
- Coat each ball in flour, egg wash and then panko breadcrumbs.
- Heat a pan with oil and shallow/deep fry the the rice balls until golden brown.
- Serve with a chutney/ spicy sauce!
Notes
- The rice should mould but if you are struggling to mould it, try adding some hot water and letting it steam in the microwave to soften it. Alternatively you can add a beaten egg to to the rice mix as it will act as a binding agent.
- If you are making the rice from fresh, you could cook the rice for longer so that it's softer. Do not soak the rice either.
