If you’re like me and you’re obsessed with halloumi cheese and its salty, meaty and enjoyably rubbery texture, then you’re going to love this recipe!! I coated it in a delicious, spicy harissa sauce and topped it with roasted vegetables in a warm, soft wrap. Check it out below…
Harissa Halloumi Wraps

Ingredients
- 1 red onion
- 1 red pepper
- 1 tbsp oil
- 1/2 tsp salt
- 4 tbsps harissa (I used harissa from the brand Mina)
- 225g halloumi cheese
- 2 tbsp greek yoghurt
- 4 tortilla wraps/ flatbread
- Handful of salad leaves
Instructions
- Begin my cutting the pepper into little squares and the red onion into small wedges.
- Place them in a roasting tray along with the oil and salt and roast for about 20mins at 225C.
- While the vegetables are roasting, slice the halloumi into 12 pieces and coat it in 3 tbsps harissa sauce. Set aside.
- Use the remaining 1 tbsp of harissa sauce and add this to 2 tbsp greek yoghurt to form a sauce.
- When the vegetables are nearly done (they should look brown and the water should evaporate), fry the halloumi on a grill pan over a medium to high heat until each side is brown.
- Remove the vegetables from the oven and begin to assemble the wrap.
- Spread each warmed flatbread with the yoghurt and harissa sauce, and top it with the vegetables, salad leaves and halloumi.
- Serve immediately :)
