When I go home to South Africa, one of the main things I look forward to is the food, of course! Aside from their famous braais, I love their desserts and today I’m sharing one of my all time favourites with you – malva pudding! Perhaps you’ve had it at The Meat Co. and are familiar with this spongy caramelised pudding that’s topped with a hot vanilla cream sauce. If you’re not, then you’re in for a treat and I’d highly recommend you try it out. I hope you love it as much as I do

Malva Pudding Recipe

For the sponge
- 1 cup sugar
- 1 egg
- 1 heaped tbsp apricot jam
- 1 cup flour
- 1/4 cup self raising flour
- 1 tsp baking powder
- Pinch of salt
- 1 tbsp melted butter
- 1 tsp vinegar
- 1 cup milk
- 1 tsp bicarbonate of soda
For the sauce
- 1 cup double cream
- 4 tbsp butter
- 1 cup sugar
- 1/2 cup hot water
- 1 tbsp vanilla essence
Instructions
- Begin by beating the sugar and egg well and then add in the apricot jam.
- In a separate bowl sift together the flour, self raising flour, baking powder and salt.
- In another separate bowl mix together the melted butter, milk, vinegar and bicarbonate of soda.
- Add all the above ingredients to the jam mixture by adding this alternatively.
- Bake for 50mins - 1hr at 180°C in a large rectangular dish or use cake moulds for individual puddings.
- For the sauce, add all the ingredients to a pot and bring to a boil.
- Pour the sauce over the pudding as soon as it is baked and serve warm.
Notes
- The pudding is delicious with a scoop of ice cream!
- This recipe makes 8 servings.
