My family and I are just a little bit fat every weekend. You may know from my Instagram posts, that Sunday in my house is pancake day! Yup every Sunday. My dad is the pro pancake maker, so that means I get to wake up to the sweet smell of pancakes without having to do anything myself 😀 I have been meaning to share the recipe for a while now, but with the official Pancake Day 2016 tomorrow – what better time to do it? – A
Pancakes

Serves 5
Light and fluffy pancakes - perfect for weekend brunch!
Ingredients
- 200g self raising flour
- 400ml full fat milk
- 25g of sugar
- Pinch of salt
- 100g melted butter
- 2 large eggs
Instructions
- Mix together flour, sugar and milk
- Add salt, melted butter and eggs to the mixture
- Mix thoroughly until airy and light
- Heat a non-stick frying pan over a medium heat and use a spray oil on the pan.
- Add a ladle of batter to the pan and flip the pancake when the top begins to bubble
- Turn over until both sides are golden brown
- Stack pancakes and add your toppings of choice
Notes
- Examples of toppings could include maple syrup, icing sugar, Nutella or fresh berries.
