It seems like winter lasted forever this year, but I’m pleased to say that the sun has finally decided to shine. This weekend, my coat went back into my wardrobe, my sunglasses finally came out and my car windows were rolled down. Oh yesss! Summer is fast approaching and I cannot wait! I don’t know about you, but a summer staple in my house has always been mango juice… Rubicon mango juice to be specific. So naturally, I was incredibly excited when I had the chance to collaborate with Rubicon and I have some exciting news to tell you about their drinks….
Rubicon now has three versions of their classic mango drink, with different levels of richness. All the drinks contain the same fruit content so the delicious flavour isn’t lost, but you can now opt for no added sugar – Rubicon Light and Fruity (Rich), 50% reduced sugar – Rubicon Regular (Richer), or treat yourself and enjoy it to the max with Rubicon Deluxe (Richest)! The new range suits everyone’s needs making it even better than before!
I love all three drinks and I use each one depending on what mood I’m in! Below are some recipe ideas to show you how you can enjoy the new Rubicon range. You can use any of the three depending on the richness level you prefer!
MANGO, LIME & MINT MOCKTAIL:
Remember when I told you about my talented friend – Cook With Anisa? I’ve collaborated with her before and we are back at it again! We’ve switched recipe ideas so she has tried out this refreshing mocktail that I’ve created.

RUBICON FRUIT SALAD:
Anisa gave me a recipe for a yummy, cooling Rubicon fruit salad. I made it for my family and everyone loved it. Find the recipe below.
- Handful of strawberries, chopped.
- Few grapes, cut in half.
- 2 bananas, sliced
- Juice of half fresh orange.
- Half cup Rubicon mango juice. I used the regular mango juice, however you can use any from the range, depending on your preference and how rich you want it to be!
- Vanilla ice cream (optional)
- Simply cut all the fruit and add it all in a large bowl.
- Add the Rubicon Juice.
- Top with ice cream and serve!
